If you can get into buisness school, that is your best bet. The economy is on a downside especially in the building industry. It depends on what kind of engineering you are going to do (structural, civil, etc.) I worked in an engineering and geology firm for 4 years but just got laid off due to work coming in. I am actually looking into buisness, just because there is wide variety of jobs related to it. Try to stick with buisness, the demand for engineering is very slow right now.

Here is what I think might be the issue.
Economics IMO is not the type of degree that is most sought after. Industrial operations engineering isn't in high demand either. Not only that but alot of experts are saying that 4-5 years from now over 90% of all engineering is going to be contracted out. So it means that working for a huge corporation might not be an option.
I would try sprinkling some finance or program management/team management experience or designations as well. MBA is highly sought after, especially if you obtain an MBA is a growing or stable field. Try working with your school and use the alumni to see if there are positions available. Also, try interning somewhere to get your foot in the door.
Good luck
